reciepe courtesy of wally's waffle house of lower willis street*

3¼ cups Plain Flour
7g instant dried yeast
4 medium eggs
Whole Milk
Vanilla essence
250g Butter

Make the batter before going to bed on Saturday night. The mixture should be full of bubbles early Sunday morning.

Mix flour and yeast (for extra man points you can use beer instead of yeast to make your waffles rise) in a large bowl; beat in eggs one by one. Add milk gradually, beating all the time, to make a thick batter. Melt butter and add gradually to the batter beating all the while. Add milk as required to give the batter the consistency of thick cream, add a few drops of vanilla essence. Cover with cling film and leave overnight at room temperature. Leave room for the batter to expand two or three times in volume.

Heat the waffle iron, quite hot; brush lightly with butter. Ladle batter into the iron and close. Cook until golden brown.

Serve with berries or fresh fruit (stewed apples with cinnamon nutmeg and cloves recommended) and yogurt or cream. Fresh coffee also recommended.

    Uber-toaster died a thousand deaths… plus there’s something fabulous about eating a meal that’s been fully prepared and cooked by someone else (becomes orgasmic if they also clean up after themselves. Oh, what a wonderfully simple life I lead ;).
